Ingredients
  

  • 2 tablespoons agar-agar powder
  • 1 cup fruit juice strawberry, mango, pineapple, or your favorite
  • 1/2 cup sugar
  • 1 cup water
  • Ice-cold water with ice cubes for ice bath

Method
 

  1. Heat fruit juice and sugar in a saucepan, stirring until the sugar fully dissolves.
  2. In a separate bowl, whisk agar-agar powder into cold water until smooth.
  3. Bring the agar-agar mixture to a boil, stirring constantly for 2–3 minutes.
  4. Slowly whisk the hot agar mixture into the fruit juice mixture until smooth.
  5. Prepare a bowl of ice-cold water.
  6. Using a dropper or squeeze bottle, drip the mixture into the ice bath to form small spheres.
  7. Let the popping boba set in the ice bath for 10–15 minutes.
  8. Strain, rinse gently with cold water, and store in syrup or use immediately.

Notes

Keep the ice bath very cold for the best popping texture and use small drops for maximum burst.
