Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breast or thighs cubed
  • 2 cups pineapple chunks
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • Fresh ginger optional
  • Green onions for garnish
  • Sesame seeds for garnish

Method
 

  1. Cube chicken into even pieces and pat dry.
  2. Whisk soy sauce, brown sugar, cornstarch, and water until smooth.
  3. Heat oil in a skillet over medium-high heat.
  4. Add chicken and cook until golden brown.
  5. Pour sauce into skillet and stir until thickened.
  6. Add pineapple chunks and toss gently.
  7. Reduce heat and simmer until chicken reaches 165°F.
  8. Remove from heat and rest briefly.
  9. Garnish with green onions and sesame seeds.

Avoid overcrowding the pan to ensure proper browning and always drain pineapple well to prevent watery sauce.
