- Preheat your oven to 350°F (175°C).

- In another bowl, cream together sugar and butter until smooth.
- Add egg and vanilla; mix until well combined.
- Gradually incorporate dry ingredients into the wet mixture.
- Scoop tablespoon-sized amounts onto lined baking sheets.
- Bake for about 10 minutes; let cool on wire racks.
- Prepare filling by creaming butter with powdered sugar and vanilla until fluffy.
- Spread filling between two cookies to create sandwiches.
