- Hydrate the gelatin: In a bowl, mix the gelatin envelopes with the water. Let it rest for 5 minutes for the gelatin to fully hydrate.
- Combine: Add the lemon juice and gelatin mixture into a saucepan.
- Cook: Place the saucepan over medium-low heat, stirring continuously with a spatula. Once it reaches a light simmer, cook for 2 to 3 minutes until the mixture is well combined.
- Prepare the mold: Grease a small baking dish (or silicone molds) with a thin layer of coconut oil or neutral cooking oil.
- Rest: Allow the mixture to cool in a cool place for 3 to 4 hours until firm.
- Cut: Remove from the fridge and cut into cubes as desired.
- Finish: Dust the cubes with crystal sugar for a beautiful contrast.
Notes
These lemon wings are best served chilled and can be stored in an airtight container for a few days. Feel free to experiment with different types of fruit juices for variations!
