Homemade Jamaican Curry Chicken Recipe

Ingredients
  

  • 1 whole chicken 3–4 lb, cut into pieces
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 scotch bonnet peppers whole
  • 1 teaspoon allspice
  • 2 medium potatoes diced
  • 2 carrots sliced
  • 2 cups chicken broth
  • 1 can 13.5 oz coconut milk
  • 2 scallions chopped
  • Juice of 1 lime
  • Fresh cilantro chopped

Method
 

  1. Season chicken with curry powder, salt, and black pepper.
  2. Marinate for at least 30 minutes for best flavor.
  3. Heat oil in a large pot and brown chicken on all sides.
  4. Remove chicken and sauté onion, garlic, and ginger in the same pot.
  5. Add scotch bonnet peppers and allspice.
  6. Return chicken to the pot with potatoes and carrots.
  7. Pour in chicken broth and bring to a simmer.
  8. Cover and cook for 30–35 minutes until chicken is tender.
  9. Stir in coconut milk and scallions.
  10. Simmer 10 minutes, then remove peppers.
  11. Finish with lime juice and garnish with cilantro.

Notes

Use Jamaican curry powder only for authentic flavor. Keep scotch bonnet peppers whole to control heat while extracting flavor.
