Ingredients
  

  • 8 oz cream cheese softened
  • 8 oz Cool Whip thawed
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups sliced strawberries
  • 2 cups pineapple chunks
  • 3 –4 kiwi diced
  • 1 cup raspberries
  • ½ cup shredded coconut
  • Optional: mini marshmallows
  • Optional: crushed graham crackers

Method
 

  1. Beat cream cheese, powdered sugar, and vanilla until smooth.
  2. Fold in Cool Whip gently until fully combined.
  3. Wash, dry, and prepare all fruit.
  4. Fold fruit into cheesecake mixture carefully.
  5. Chill for at least 1 hour before serving.

Notes

Make sure fruit is completely dry to avoid a watery texture and use full-fat cream cheese for best flavor and consistency.
