Method
- Pour the cold water into a saucepan and sprinkle the gelatin evenly over the top, then let it bloom for 5 minutes.
- Brew a strong green tea and measure out 1/2 cup.
- Add the brewed green tea, ginger juice, and lemon juice to the bloomed gelatin.
- Place the saucepan over low heat and stir constantly until the gelatin fully dissolves without boiling.
- Taste and stir in honey if desired.
- Pour the mixture into silicone molds or a lightly greased dish.
- Refrigerate for at least 2 hours until firm.
- Remove from molds or cut into squares and serve.
Notes
Store chews in an airtight container in the refrigerator and consume within one week for best texture and flavor.
