Ingredients
  

  • 1 cup mayonnaise
  • 4 –6 garlic cloves minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of cayenne pepper optional
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley or chives

Method
 

  1. Finely mince the garlic and mash into a paste if desired.
  2. Add mayonnaise to a mixing bowl.
  3. Stir in garlic, lemon juice, and olive oil.
  4. Add salt, black pepper, cayenne pepper, and Dijon mustard.
  5. Whisk until smooth and creamy.
  6. Taste and adjust seasoning as needed.
  7. Fold in fresh herbs.
  8. Cover and refrigerate for at least 30 minutes before serving.

Notes

Chilling the aioli helps the garlic flavor mellow and fully develop. Roasted garlic can be used for a sweeter, milder sauce.
