Ingredients
  

  • 2 lbs ground beef 80/20
  • 1 cup breadcrumbs or oats/panko
  • 2 large eggs
  • 1/2 cup milk or dairy-free milk
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1/2 cup ketchup divided
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley chopped
  • Optional: 1/2 tsp smoked paprika

Method
 

  1. In a large bowl, gently mix ground beef, breadcrumbs, eggs, milk, onion, garlic, 1/4 cup ketchup, Worcestershire sauce, thyme, salt, pepper, parsley, and paprika.
  2. Shape the mixture into a loaf that fits comfortably inside a 6-quart crockpot.
  3. Place the loaf into the crockpot and spread remaining 1/4 cup ketchup evenly over the top.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until internal temperature reaches 160°F (71°C).
  5. Optional: Transfer to a baking sheet and broil for 3–4 minutes for a caramelized top.
  6. Rest 10 minutes before slicing and serving.

Notes

Avoid overmixing to keep the meatloaf tender. Let rest before slicing to retain juices. A foil or parchment sling makes removal easy.
