Ingredients
  

  • 4 medium potatoes Russet or Yukon Gold
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons butter
  • 2 green onions finely chopped
  • 1 large egg

Method
 

  1. Peel and chop the potatoes, then boil in salted water until fork-tender.
  2. Drain the potatoes and mash until smooth.
  3. Mix the mashed potatoes with flour, salt, pepper, green onions, and egg until a soft dough forms.
  4. Shape the mixture into small patties.
  5. Melt butter in a skillet over medium heat.
  6. Cook the potato cakes in batches until golden and crispy on both sides.
  7. Drain briefly on paper towels and serve warm.

Notes

Do not overmix the potato dough, as this can make the cakes dense instead of light and fluffy.
