Method
- In a bowl, whisk together hoisin sauce, soy sauce, oyster sauce, honey, Shaoxing wine, sesame oil, five-spice powder, brown sugar, garlic, ginger, and food coloring.
- Add chicken thighs and coat evenly with the marinade.
- Cover and marinate in the refrigerator for at least 4 hours or overnight.
- Preheat oven to 400°F (200°C) and line a baking tray with foil and a wire rack.
- Place chicken on the rack and reserve remaining marinade.
- Bake for 25–30 minutes, basting every 10 minutes with the reserved marinade.
- Broil for 3–5 minutes until edges are caramelized.
- Rest for 5 minutes, then slice and serve.
Notes
For best results, marinate overnight and baste frequently to build the signature glossy char siu glaze.
