Ingredients
  

  • 2 large boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 pound penne pasta
  • 1/2 cup unsalted butter
  • 8 oz cream cheese softened
  • 1 1/2 cups whole milk
  • 1/4 cup buffalo sauce
  • 6 oz Monterey Jack cheese shredded
  • 1/2 cup blue cheese crumbles
  • Fresh parsley or chives chopped

Method
 

  1. Season chicken with salt and black pepper.
  2. Heat olive oil in a skillet and cook chicken 5 to 7 minutes per side until fully cooked.
  3. Remove chicken, let rest, then dice or shred and toss with buffalo sauce.
  4. Cook pasta according to package instructions until al dente and drain.
  5. Melt butter in a saucepan over medium heat.
  6. Add cream cheese and stir until smooth.
  7. Gradually whisk in milk until creamy.
  8. Reduce heat and stir in Monterey Jack and blue cheese until melted.
  9. Add cooked pasta to the sauce and toss to coat.
  10. Fold in buffalo chicken and mix gently.
  11. Adjust seasoning and serve garnished with parsley or chives.

Notes

Use freshly shredded cheese and keep heat low when making the sauce to prevent curdling or grainy texture.
