- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned (5-7 minutes); drain excess fat.
- Add chopped onion and minced garlic; sauté until onion is soft (3-4 minutes).
- Spread beef mixture in the baking dish. Layer sliced potatoes on top; season with salt, pepper, Italian seasoning, and paprika.
- Sprinkle cheddar and Parmesan cheese over the top. Pour broth around edges to keep potatoes moist.
- Cover with foil; bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until potatoes are tender and cheese is bubbly.
- Let it cool slightly before serving; garnish with fresh parsley if desired.
