Ingredients

  • 3 large Eggs Consider flax eggs for a vegan option.
  • 1 cup Greek Yogurt Non-dairy yogurt can be used as a substitute.
  • 1 serving Sweetener Adjust based on taste preference.
  • 1 teaspoon Vanilla Extract Opt for pure extract for elevated taste.
  • 1 cup All-Purpose Flour Gluten-free blend works great too.
  • 2 teaspoons Baking Powder Ensure it’s fresh for best rise.
  • 1 cup Fresh Berries Adds flavor and antioxidants, great for topping.
  • 1/2 cup Nuts Almonds or walnuts are excellent choices for added crunch.
  • 1 serving Maple Syrup Choose pure maple for best flavor and serve as a delicious topping.

Equipment

  • Large mixing bowl
  • Whisk
  • Sifter
  • Ramekins
  • Oven

Method

  1. In a large mixing bowl, whisk together 3 eggs, 1 cup of Greek yogurt, your preferred sweetener, and 1 teaspoon of vanilla extract until the mixture is smooth and creamy. This should take about 2-3 minutes.
  2. Gradually sift in 1 cup of all-purpose flour and 2 teaspoons of baking powder into the wet mixture. Using a gentle folding motion, mix just until combined to avoid overmixing.
  3. While you prepare the batter, preheat your oven to 350°F (175°C).
  4. Lightly grease 4 ramekins or small bowls, then divide the batter evenly among them, filling each about ¾ full.
  5. Place the ramekins in the preheated oven and allow them to bake for about 25 minutes.
  6. Once baked, let them cool slightly before serving. Optionally top with berries, maple syrup, or nuts.

Notes
