High Protein Italian Grinder Salad

Ingredients
  

  • 60 g red onion thinly sliced
  • 180 g iceberg lettuce sliced into 1/4-inch strips and halved
  • 42.5 g turkey pepperoni roughly chopped
  • 42.5 g thin deli turkey roughly chopped
  • 40 g pepperoncini stems removed and diced
  • 40 g reduced-fat feta cheese crumbled
  • 50 g grape tomatoes quartered (optional)
  • 15 ml extra-virgin olive oil
  • 5 ml red wine vinegar
  • 1 tsp salt to season
  • 1 tsp pepper to season

Method
 

  1. In a small bowl, soak the sliced onions in cold water for about 10 minutes to mellow their sharp bite. When done, pat onions dry with a paper towel.
  2. Cut iceberg lettuce in half and remove core. Slice lengthwise into 1/4-inch strips. Cut strips in half to create strips 2 inches or less in length. Measure 3 cups. Chop other ingredients as indicated.
  3. In a small bowl, whisk together the olive oil and red wine vinegar. Season with salt and pepper.
  4. In a large bowl, combine the chopped lettuce, pepperoni, deli turkey, pepperoncini, onions, tomatoes (optional) and crumbled feta. Drizzle with dressing and toss gently to coat. Lightly season with fresh cracked pepper.

Notes

Feel free to add extra vegetables or swap the turkey for your favorite protein to customize this salad.
