Ingredients
  

  • 6 large Eggs
  • 454 g Breakfast Sausage
  • 600 g Red Potatoes Diced into bite-sized cubes
  • 150 g Green Bell Pepper Diced
  • 100 g Cheddar Cheese Shredded
  • 60 ml Milk Optional for eggs
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Dice the red potatoes into bite-sized cubes and season with salt and pepper. Spread them on a greased baking sheet and roast for 20-25 minutes.
  3. In a skillet over medium heat, cook the breakfast sausage until browned. Add the diced green bell pepper and cook until tender.
  4. In a mixing bowl, whisk the eggs with a splash of milk, salt, and pepper. Pour the mixture into the skillet, cooking gently until just set.
  5. Distribute the cooled roasted potatoes among meal prep containers, then spoon the sausage and egg mixture on top.
  6. Sprinkle cheddar cheese over each bowl, allowing it to melt from the warmth of other ingredients.
  7. Allow the bowls to cool before sealing with airtight lids for freshness.
