Ingredients
  

  • 1 cup egg whites about 8 large egg whites; ensure they are fresh for best frothing
  • 0.5 cup diced vegetables such as spinach, bell peppers, or onions for flavor and nutrients
  • 0.5 cup shredded cheese cheddar, feta, or mozzarella work well; choose your favorite melting cheese
  • 0.5 cup cooked meat optional; finely diced turkey, ham, or crumbled bacon for extra protein
  • 0.5 tsp salt to taste; adjust seasoning based on other ingredients
  • 0.25 tsp pepper freshly ground for best flavor, adjust to taste
  • 1 application cooking spray to lightly grease the muffin tin for easy removal
  • 12 count muffin liners optional, for easier cleanup and transport of the bites

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray or line it with muffin liners.
  2. In a mixing bowl, whisk the egg whites until frothy. Add salt and pepper to taste.
  3. Gently fold in the diced vegetables, shredded cheese, and cooked meat if using. Ensure the ingredients are evenly distributed throughout the egg whites.
  4. Divide the mixture evenly among the muffin cups, filling each about three-quarters full.
  5. Bake in the preheated oven for 20-25 minutes, or until the bites are set and lightly golden on top.
  6. Let the egg white bites cool in the tin for a few minutes before transferring them to a wire rack. Enjoy them warm or store them for later!

Notes

Feel free to customize these bites with other vegetables like mushrooms or zucchini, or different cheeses. They are great for meal prep and can be stored in the refrigerator for up to 3-4 days.
