Ingredients
  

  • 8 large eggs, hard-boiled and peeled
  • 120 g plain Greek yogurt, full fat replaces most of the mayo and adds significant protein
  • 120 g full fat cottage cheese drained if watery, blended smooth or left chunky
  • 30 g good quality mayonnaise just enough for richness and classic flavor
  • 15 ml Dijon mustard
  • 15 ml yellow mustard
  • 5 ml apple cider vinegar
  • 1 tsp salt
  • 1 tsp black pepper
  • 3 stalks celery, finely diced
  • 30 g red onion, very finely minced
  • 30 g fresh dill, finely chopped or 1 teaspoon dried dill
  • 30 g fresh chives, thinly sliced
  • 15 g fresh parsley, finely chopped
  • 2.5 g garlic powder
  • 2.5 g onion powder
  • 2.5 g smoked paprika plus extra for garnish
  • 15 ml pickle juice or finely diced dill pickles for extra tang
