Ingredients
  

  • 3 cans canned beans drained
  • 567 g cooked chicken breast
  • 150 g cherry tomatoes halved
  • 150 g cucumbers diced
  • 150 g red bell pepper diced
  • 20 g fresh herbs chopped
  • 60 ml olive oil
  • 60 ml lemon juice
  • 30 ml lemon vinegar or red wine vinegar
  • 1 tsp garlic powder
  • 15 g Dijon mustard
  • 1 tsp salt to taste
  • 1 tsp pepper to taste

Method
 

  1. Combine all of the salad ingredients in a large bowl.
  2. In a small bowl, combine the dressing ingredients. Use a whisk to incorporate.
  3. Gently pour the dressing over the salad ingredients. Gently combine and season with salt and pepper to taste.
