Ingredients
  

  • 480 g Cottage Cheese
  • 40 g Powdered Sweetener allulose, monk fruit, or erythritol
  • 30 ml Fresh Lemon Juice adjust to taste
  • 10 g Lemon Zest plus more for topping
  • 5 ml Vanilla Extract
  • 30 ml Heavy Cream if needed for blending
  • 75 g Fresh Blueberries for topping

Method
 

  1. In a high-speed blender or food processor, combine cottage cheese, powdered sweetener, lemon juice, lemon zest, and vanilla extract. Blend for 30–60 seconds until completely smooth.
  2. If the mousse is too thick, add 1–2 tbsp of heavy cream at a time and blend again until silky and light.
  3. For the best flavor and texture, refrigerate for 15–20 minutes before serving.

Notes

This mousse is best served chilled and can be topped with additional lemon zest or blueberries for extra flavor.
