Ingredients

Cake Batter
  • 30 g Vanilla protein powder Use your favorite vanilla-flavored protein powder for best results in flavor and protein content.
  • 30 g Oat flour Ground from rolled oats, it provides a tender texture and adds fiber; you can make your own by blending oats.
  • 1 tsp Baking powder Essential for a light and fluffy cake texture in the microwave.
  • 0.5 tsp Ground cinnamon Adds a warm, classic spice to the cake batter, enhancing the overall cinnamon roll experience.
  • 10 g Granulated sweetener Choose your preferred calorie-free or low-calorie sweetener to adjust sweetness without added sugar.
  • 0.25 tsp Salt A small pinch balances the sweetness and enhances all the other flavors in the cake.
  • 60 ml Milk Any type of milk (dairy or non-dairy) will work to achieve a soft, cake-like consistency.
  • 1 large Large egg white Binds ingredients, adds protein, and keeps the cake lean; ensures a good structure.
  • 0.5 tsp Vanilla extract Boosts the overall sweetness and adds aromatic depth to the cake batter.
Cinnamon Swirl Mixture
  • 10 ml Melted butter or coconut oil Adds richness to the cinnamon swirl; use coconut oil for a dairy-free option.
  • 15 g Brown sugar or coconut sugar Provides a deep, molasses-like flavor and caramelizes beautifully in the swirl.
  • 0.5 tsp Ground cinnamon This separate portion of cinnamon is for creating the distinct spiced ribbon in the swirl.
Cream Cheese Topping
  • 30 g Light cream cheese, softened Ensure it's at room temperature for a smooth, lump-free and easily spreadable frosting.
  • 15 g Powdered sweetener or sugar Mixes easily into the cream cheese for a smooth, non-grainy frosting texture.
  • 5 ml Milk Use a small amount to thin the cream cheese topping to your desired spreadable consistency.
  • 0.25 tsp Vanilla extract A touch of vanilla enhances the tangy creaminess of the cream cheese topping.

Equipment

  • Microwave-safe mug (10 fl oz)
  • Small Bowl
  • Toothpick or butter knife

Method

  1. In a microwave-safe mug of at least 10 fluid ounces, combine vanilla protein powder, oat flour, baking powder, cinnamon (for cake batter), granulated sweetener, and a pinch of salt. Stir well to ensure even flavor distribution for a well-balanced batter.
  2. Add milk, egg white, and vanilla extract (for cake batter) to the dry mix. Stir continuously until you achieve a smooth, lump-free batter. The consistency should be pourable but thick enough to hold the cinnamon swirl.
  3. In a small bowl, blend melted butter or coconut oil, brown sugar or coconut sugar, and ground cinnamon (for swirl mixture). This mixture offers a sweet, spiced ribbon that will infuse the mug cake with authentic cinnamon roll flavor.
  4. Drop spoonfuls of the cinnamon swirl mixture onto the batter in the mug. Using a toothpick or butter knife, gently swirl it through the cake to create a beautiful marbled effect without overmixing.
  5. Cook on high power for 60 to 90 seconds until the cake is just set but still moist in the center. Carefully monitor to avoid overcooking, which can dry out the protein-rich cake.
  6. While the cake cools slightly, beat together softened light cream cheese, milk (for topping), powdered sweetener, and vanilla extract (for topping) until smooth and spreadable. This topping adds a tangy creaminess that complements the spiced cake perfectly.
  7. Spread the cream cheese frosting generously over the warm mug cake. Serve immediately to enjoy the gooey, comforting combination at its best.

Notes

This mug cake is best served warm and fresh. Feel free to adjust the amount of sweetener in both the cake and frosting to your personal preference. For a richer flavor, you can use full-fat cream cheese for the topping.
