Ingredients
  

  • 120 g oat flour
  • 60 g chocolate whey protein powder
  • 30 g unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 120 ml non-fat Greek yogurt
  • 120 ml unsweetened almond milk
  • 1 large egg
  • 60 ml sugar-free maple syrup
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and coat a 6-cavity donut pan with non-stick cooking spray.
  2. In a medium mixing bowl, whisk together the oat flour, chocolate protein powder, cocoa powder, baking powder, and salt.
  3. In a separate bowl, combine the Greek yogurt, almond milk, egg, maple syrup, and vanilla extract until well emulsified.
  4. Incorporate the wet ingredients into the dry ingredients, stirring until a smooth batter forms without overmixing.
  5. Transfer the batter into a piping bag or zip-top bag with the corner snipped, and pipe evenly into the donut pan cavities.
  6. Bake for 10 to 12 minutes until the donuts are firm to the touch and a toothpick inserted returns clean.
  7. Cool in the pan for 5 minutes before removing to a wire rack to cool completely.

Notes

These donuts are best enjoyed fresh but can be stored in an airtight container for a few days. Try adding some chocolate chips for an extra treat!
