Ingredients
  

  • 400 g Chickpeas
  • 1 Cucumber
  • 1 cup Cherry Tomatoes
  • ¼ Red Onion
  • ½ Bell Pepper
  • 2 tbsp Fresh Parsley or Cilantro
  • 30 ml Olive Oil
  • 15 ml Lemon Juice
  • 1 tbsp Dijon Mustard
  • to taste Salt
  • to taste Black Pepper
  • ¼ tsp Smoked Paprika or Cumin

Method
 

  1. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, bell pepper, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour dressing over the salad and toss gently to combine.
  4. Add optional smoked paprika or cumin if desired.
  5. Serve immediately or chill in the fridge for 15–30 minutes to allow flavors to meld.

Chill the salad for a bit before serving to enhance the flavors. Feel free to customize with your favorite veggies!
