  • 1 tablespoon butter or olive oil
  • 1 large yellow onion diced
  • 2 large carrots peeled and diced
  • 1 stalk celery diced
  • 2 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon smoked paprika
  • 3 cups vegetable broth
  • 2 cups 1% milk
  • 4 cups chopped broccoli
  • 4 oz sharp cheddar cheese shredded
  • 1 cup low-fat cottage cheese blended until smooth
  • Salt and pepper to taste

Method
 

  1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery, cooking 10 minutes.
  2. Add garlic, cooking for 1 minute.
  3. Stir in flour and paprika, coating vegetables evenly.
  4. Add broth and broccoli. Simmer gently for 8-9 minutes until broccoli is fork-tender.
  5. Reduce heat to low and add milk. Stir gently.
  6. Add blended cottage cheese and shredded cheddar, stirring until melted and smooth.
  7. Blend 1 cup of soup until smooth and return to pot (or use immersion blender).
  8. Season with salt and pepper to taste before serving.
