Ingredients
  

  • 1 whole whole-wheat tortilla
  • 120 g cottage cheese
  • 2 eggs scrambled eggs
  • 1 whole ripe avocado, sliced
  • 1 small tomato, diced
  • 30 g cilantro, chopped
  • 30 ml lime, juiced
  • 1 tsp Salt
  • 1 tsp pepper

Method
 

  1. Combine the cottage cheese, scrambled eggs, diced tomato, cilantro, and lime juice in a bowl.
  2. Season with salt and pepper.
  3. Lay the whole-wheat tortilla flat. Spread the mixture in the center.
  4. Place the sliced avocado on top.
  5. Fold the sides in and roll from the bottom to the top.
  6. Cut in half and serve or wrap in foil for later.
