Ingredients
  

  • 450 g lean ground chicken breast
  • 240 g spicy chorizo
  • 400 g large potatoes (Russet or Yukon Gold)
  • 150 g bell peppers (any color)
  • 4 large eggs or egg whites
  • 60 ml sweet and spicy sauce
  • 1 tsp Salt
  • 1 tsp pepper to taste
  • 30 ml olive oil (extra virgin)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Cube the potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, flipping halfway.
  3. In a skillet, cook the ground chicken over medium heat for 5-7 minutes. Add the chorizo and sweet and spicy sauce, cooking for an additional 5 minutes.
  4. In another skillet, whisk eggs and cook over medium-low heat until set, about 3-5 minutes.
  5. Assemble the bowls starting with roasted potatoes, then add the chicken and chorizo mixture, followed by the scrambled eggs.
