- Preheat the oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish with non-stick spray.
- Place the cottage cheese, eggs, oats, maple syrup, vanilla extract, cinnamon, and salt into a high-speed blender.
- Blend on high until the mixture is completely smooth and the oats are fully incorporated.
- Gently fold in half of the fresh blueberries and the lemon zest using a spatula.
- Pour the batter into the prepared baking dish and spread it evenly.
- Scatter the remaining blueberries across the surface of the batter.
- Bake for 35 to 40 minutes, or until the center is set and the edges are lightly golden brown.
- Remove from the oven and allow the bake to cool for at least 10 minutes before slicing to ensure the structure is firm.
