Healthy Strawberry Cheesecake Protein Balls

Ingredients
  

  • 225 g cottage cheese
  • 120 g plain Greek yogurt
  • 120 g vanilla whey protein powder
  • 40 g freeze-dried strawberries
  • 48 g almond flour
  • 1 Lemon zest (from 1 lemon)
  • 1 tsp vanilla extract

Method
 

  1. Blend the cottage cheese and Greek yogurt in a food processor or blender until completely smooth and creamy.
  2. Add the vanilla whey protein powder, lemon zest, and vanilla extract to the blender. Pulse a few times to fully incorporate until the mixture is thick but pliable.
  3. Transfer the mixture to a bowl. Gently fold in the almond flour and freeze-dried strawberries.
  4. Using your hands or a small cookie scoop, form the mixture into 12 even balls, about 1.5 inches in diameter. If the mixture is too sticky, chill in the fridge for 10 minutes before rolling.
  5. Place the balls on a baking sheet or plate lined with parchment paper. Refrigerate for at least 30 minutes to firm up. For longer storage, freeze in an airtight container for up to 2 months.
