Ingredients
  

  • 1 cup lump crab meat
  • 1 cup large shrimp peeled and deveined
  • 1 lobster tail meat removed and chopped
  • 4 tablespoons unsalted butter
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 2 tablespoons tomato paste
  • 4 cups seafood stock
  • Salt and black pepper to taste

Method
 

  1. Melt butter in a large pot over medium heat.
  2. Add diced onion and cook until translucent.
  3. Add garlic and sauté briefly until fragrant.
  4. Stir in tomato paste and cook for 2 minutes.
  5. Gradually pour in seafood stock while stirring.
  6. Bring to a gentle simmer and cook for 10 minutes.
  7. Add crab meat, shrimp, and lobster.
  8. Simmer gently for 5 minutes until seafood is just cooked.
  9. Blend about half of the bisque until smooth.
  10. Return blended portion to the pot and stir.
  11. Season with salt and pepper.
  12. Serve hot.

Notes

Do not overcook the seafood. Blend only part of the soup to maintain a luxurious texture with visible seafood pieces.
