Method
- Melt butter in a large pot over medium heat.
- Add diced onion and cook until translucent.
- Add garlic and sauté briefly until fragrant.
- Stir in tomato paste and cook for 2 minutes.
- Gradually pour in seafood stock while stirring.
- Bring to a gentle simmer and cook for 10 minutes.
- Add crab meat, shrimp, and lobster.
- Simmer gently for 5 minutes until seafood is just cooked.
- Blend about half of the bisque until smooth.
- Return blended portion to the pot and stir.
- Season with salt and pepper.
- Serve hot.
Notes
Do not overcook the seafood. Blend only part of the soup to maintain a luxurious texture with visible seafood pieces.
