Ingredients
  

  • 1 pound 450g ground pork sausage
  • 8 ounces 225g cream cheese, softened
  • 1 10-ounce/283g can Rotel tomatoes with green chilies, drained
  • 1 1/2 cups 180g Bisquick baking mix
  • 2 cups 200g shredded cheese (cheddar, Mexican blend, or pepper jack)
  • Optional: 1/2 tsp garlic powder
  • Optional: 1/2 tsp onion powder
  • Optional: pinch of black pepper
  • Optional: 2 tbsp chopped green onions
  • Optional: 1–2 diced jalapeños

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Mix sausage and softened cream cheese until smooth and fully combined.
  3. Add drained Rotel and shredded cheese and mix until evenly distributed.
  4. Incorporate Bisquick and optional seasonings until mixture holds together.
  5. Shape mixture into 1-inch balls using a tablespoon or scoop.
  6. Place balls 1 inch apart on prepared baking sheet.
  7. Bake 18–25 minutes until golden brown and internal temperature reaches 165°F (74°C).
  8. Let rest 5 minutes before serving.

Notes

Drain Rotel thoroughly to prevent soggy sausage balls. Chill mixture 15 minutes if too soft to shape.
