Method
- Brew strong espresso or coffee and allow it to cool completely.
- In a bowl, whisk Greek yogurt and protein powder until smooth and lump-free.
- Add cooled coffee, maple syrup, and vanilla extract; mix until fully combined.
- Sift cocoa powder over the mixture and gently fold it in.
- Spoon pudding into serving glasses or jars.
- Refrigerate for at least 30 minutes to set.
- Top with crushed cookies and whipped topping just before serving.
Notes
For a keto version, replace maple syrup with erythritol or monk fruit. Blended cottage cheese can replace Greek yogurt if needed.
