Ingredients
  

  • cups all-purpose flour
  • 1 cup granulated sugar
  • teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter room temperature
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup milk
  • ¼ cup unsweetened cocoa powder

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan. Line with parchment paper for easy removal.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Add dry ingredients alternately with milk, beginning and ending with flour. Mix just until combined.
  6. Remove one-third of the batter and mix with cocoa powder until smooth.
  7. Alternate spooning vanilla and chocolate batter into the pan, then gently swirl with a knife.
  8. Bake for 50–60 minutes, until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Do not overmix the batter or the cake may become dense. Use room temperature ingredients for best results. Cover loosely with foil if the top browns too quickly.
