Method
- Whisk flour, baking powder, and salt together; set aside.
- Cream softened butter and 3/4 cup sugar for 3–5 minutes until light and fluffy.
- Beat in egg, then vanilla extract until combined.
- Add gelatin powder and mix until fully incorporated.
- Slowly mix in dry ingredients until just combined; add milk if dough is too dry.
- Form dough into a disc, wrap in plastic, and chill for 1 hour.
- Roll dough into 1-inch balls and coat in sugar.
- Place on lined baking sheets, spaced 2 inches apart.
- Bake at 350°F (175°C) for 8–10 minutes until edges are set.
- Cool 5 minutes on baking sheet, then transfer to a wire rack.
Notes
Chilling the dough prevents spreading, and underbaking slightly keeps cookies soft and chewy. Different gelatin flavors affect both color and intensity.
