Method
- Preheat oven to 400°F and line a baking tray with parchment paper.
- Cut baguette slices into heart shapes using a cookie cutter.
- Brush both sides of bread hearts with olive oil.
- Bake for 10 minutes or until golden and crispy.
- Allow toast hearts to cool slightly, then spread goat cheese on each piece.
- In a bowl, mix tomatoes, garlic, basil, balsamic vinegar, remaining olive oil, salt, and pepper.
- Spoon tomato mixture over each bruschetta heart.
- Top with grated Parmesan cheese and serve immediately.
Notes
Do not assemble bruschetta while bread is hot to prevent sogginess. Assemble just before serving for best texture and presentation.
