Ingredients
  

  • 8 slices fresh baguette bread
  • 2 tablespoons extra virgin olive oil
  • 2 ripe tomatoes finely chopped
  • 3 cloves garlic minced
  • 1/2 teaspoon balsamic vinegar
  • 1/4 cup fresh basil chopped
  • 4 oz goat cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F and line a baking tray with parchment paper.
  2. Cut baguette slices into heart shapes using a cookie cutter.
  3. Brush both sides of bread hearts with olive oil.
  4. Bake for 10 minutes or until golden and crispy.
  5. Allow toast hearts to cool slightly, then spread goat cheese on each piece.
  6. In a bowl, mix tomatoes, garlic, basil, balsamic vinegar, remaining olive oil, salt, and pepper.
  7. Spoon tomato mixture over each bruschetta heart.
  8. Top with grated Parmesan cheese and serve immediately.

Notes

Do not assemble bruschetta while bread is hot to prevent sogginess. Assemble just before serving for best texture and presentation.
