Ingredients
  

  • 1 bag 30 oz frozen hash browns, thawed
  • 8 tbsp 1 stick butter, melted
  • 1 can 10 ¾ oz condensed cream of chicken soup
  • 1 small onion chopped
  • 2 cups cheddar cheese shredded and divided
  • 1 cup sour cream
  • 1 tsp salt
  • ½ tsp pepper

Method
 

  1. Thaw frozen hash browns thoroughly and finely chop the onion.
  2. In a large bowl, mix onion, 1 cup cheddar cheese, salt, pepper, sour cream, and cream of chicken soup.
  3. Fold in thawed hash browns and melted butter until evenly coated.
  4. Preheat oven to 350°F and grease a 9x11-inch baking dish.
  5. Spread mixture evenly into the dish and top with remaining 1 cup cheddar cheese.
  6. Bake for 45–60 minutes until golden brown and bubbling. Rest 5–10 minutes before serving.

Notes

For extra flavor, add garlic powder or minced garlic. For a crispy top, broil the casserole for the last 2–3 minutes.
