Ingredients
  

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes halved
  • 1/4 red onion thinly sliced
  • 5 ounces salami diced
  • 6 ounces deli turkey breast chopped
  • 8 ounces provolone cheese cubed
  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 tablespoon banana pepper juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/3 cup banana pepper rings sliced
  • Salt and black pepper to taste

Method
 

  1. Cook rotini pasta in salted water until al dente. Drain and rinse with cold water.
  2. In a large bowl, whisk together mayonnaise, red wine vinegar, banana pepper juice, garlic powder, and oregano.
  3. Add cherry tomatoes, red onion, salami, turkey, provolone cheese, and banana peppers.
  4. Add cooled pasta and toss gently until evenly coated.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 30 minutes before serving.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. Whole wheat pasta or extra vegetables can be added for a healthier twist.
