Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika optional
  • 1 cup cold sparkling water or club soda
  • 1 egg optional

Method
 

  1. Whisk flour, cornstarch, baking powder, salt, black pepper, and paprika together in a large bowl.
  2. Gradually add cold sparkling water while whisking briefly until just combined; do not overmix.
  3. If using, lightly beat egg separately and gently fold into the batter.
  4. Pat fish fillets completely dry and lightly dust with flour.
  5. Heat frying oil to 350–375°F.
  6. Dip fish into batter, allowing excess to drip off.
  7. Carefully place fish into hot oil and fry for 4–6 minutes per side until golden brown.
  8. Remove fish and drain on a wire rack.
  9. Serve immediately for best crispiness.

Do not overmix the batter and always use cold sparkling liquid for maximum crispiness. Fry in small batches to maintain oil temperature.
