Ingredients
  

  • 3 cups diced potatoes pre-cooked (boiled, roasted, or canned and well-drained)
  • 1 cup chopped yellow onion
  • 2 cups cooked corned beef chopped
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly cracked black pepper to taste

Method
 

  1. Heat a large cast-iron or heavy skillet over medium heat for 1–2 minutes.
  2. Add butter and allow it to melt and lightly foam.
  3. Add potatoes in a single layer and cook undisturbed for 5–6 minutes until golden.
  4. Flip potatoes and cook an additional 3–4 minutes.
  5. Push potatoes aside and add onions; cook 2–3 minutes until softened.
  6. Stir in corned beef, garlic powder, onion powder, and black pepper.
  7. Press mixture lightly into the pan and cook 4–5 minutes.
  8. Stir, press again, and cook another 4–5 minutes until crispy.
  9. Season with salt, remove from heat, and serve hot.

Notes

For extra crispiness, avoid stirring too often and use a cast-iron skillet. Serve with fried or poached eggs for a classic breakfast.
