Ingredients
  

  • cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup chilled butter cubed
  • 1 egg beaten
  • 2 tbsp milk
  • cups fresh or frozen cherries pitted
  • 3 tbsp granulated sugar for filling
  • 2 tbsp cornflour cornstarch

Method
 

  1. Preheat oven to 375°F (190°C) and grease or line an 8x8-inch baking pan.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Cut in chilled butter until crumbly.
  4. Stir in egg and milk until a soft dough forms.
  5. Reserve ½ cup of the crumb mixture for topping.
  6. Press remaining dough evenly into the prepared pan.
  7. Toss cherries with sugar and cornflour until coated.
  8. Spread cherry mixture evenly over the crust.
  9. Sprinkle reserved crumbs over the top.
  10. Bake for 32 minutes until golden and bubbling.
  11. Cool, then chill for cleaner slices before cutting into bars.
