Ingredients
  

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup shredded cheese cheddar or mozzarella
  • 1/2 cup chopped pitted olives green or black
  • 1/3 cup olive oil
  • 1 cup milk
  • 1 –2 teaspoons dried herbs oregano or basil

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, salt, and dried herbs.
  3. Fold in shredded cheese and chopped olives.
  4. In a separate bowl, whisk olive oil and milk until combined.
  5. Add wet ingredients to dry ingredients and mix gently until just combined.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 45–50 minutes, or until a toothpick inserted comes out clean.
  8. Cool for 10 minutes before slicing and serving.

Notes

Do not overmix the batter to keep the bread tender. Use parchment paper for easy removal and clean slicing.
