Ingredients
  

  • 8 oz pasta
  • 2 ripe avocados
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Cook pasta in salted water until al dente.
  2. Drain pasta and rinse with cold water.
  3. Mash avocados in a large bowl until mostly smooth.
  4. Add lime juice, olive oil, salt, and pepper to the avocado and mix well.
  5. Add cooled pasta to the avocado dressing.
  6. Add cherry tomatoes, red onion, and cilantro.
  7. Gently toss until evenly coated.
  8. Serve immediately.

Notes

Use ripe avocados for best creaminess. Serve immediately for best color and flavor. Add extra lime juice to prevent browning if storing briefly.
