  • 1 lb 450g boneless skinless chicken breasts or thighs, cut into 1–1½ inch pieces
  • 2 tbsp olive oil
  • Juice and zest of 1 large lemon about ¼ cup juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Optional: ½ tsp Italian seasoning
  • Optional: ¼ tsp red pepper flakes
  • Fresh parsley for garnish
  • Lemon wedges for serving

Method
 

  1. In a bowl, whisk olive oil, lemon juice, lemon zest, garlic powder, onion powder, salt, pepper, and optional seasonings.
  2. Add chicken pieces and toss to coat evenly.
  3. Marinate for 15–30 minutes for best flavor.
  4. Preheat air fryer to 380°F for 3–5 minutes.
  5. Arrange chicken in a single layer in the air fryer basket.
  6. Air fry for 10–12 minutes, shaking or flipping halfway through cooking.
  7. Cook until golden and internal temperature reaches 165°F.
  8. Garnish with fresh parsley and a squeeze of lemon before serving.
