Ingredients

  • 240 g sweetened condensed milk Provides a creamy, rich texture.
  • 60 ml pineapple juice Adds authentic tropical sweetness.
  • 15 g finely chopped pineapple Optional for a burst of juicy pineapple flavor.
  • 100 g shredded coconut The base that gives these truffles their unique texture.
  • 85 g white chocolate Melted for a touch of luxury and creaminess.
  • 1 tsp vanilla extract Complements the coconut and pineapple beautifully.
  • 1 tsp salt Balances the sweetness and enhances the overall flavor.
  • 50 g extra shredded coconut For rolling the truffles, giving them a beautiful finish.

Method

  1. In a mixing bowl, combine the sweetened condensed milk, pineapple juice, optional chopped pineapple, melted white chocolate, vanilla extract, and salt. Stir until smooth.
  2. Gradually add the shredded coconut, mixing until you achieve a firm, dough-like consistency. If the mixture feels too soft, add more shredded coconut until it holds shape when rolled.
  3. Using a tablespoon, scoop out portions of the mixture and roll them into small balls. Use your hands to shape them evenly.
  4. Roll each truffle in additional shredded coconut, coating them fully for a snowball-like appearance.
  5. Arrange the truffles on a parchment-lined tray, then refrigerate for at least 30 minutes to firm up before serving.

Notes

You can substitute shredded coconut with unsweetened coconut for a less sweet version. Additionally, using coconut milk can enhance the coconut flavor.
