Ingredients
  

  • 150 g strawberries, hulled and sliced
  • 150 g blueberries
  • 150 g pineapple chunks
  • 150 g mandarin oranges, drained
  • 150 g kiwi, peeled and sliced
  • 150 g grapes, halved
  • 226 g cream cheese, softened
  • 96 g instant cheesecake pudding mix
  • 240 ml Greek yogurt
  • 5 tsp vanilla extract
  • 120 ml coconut milk
  • 30 g honey
  • 20 g toasted coconut flakes
  • 150 g additional fresh fruit for topping

Method
 

  1. In a large bowl, combine all the prepared fruits: strawberries, blueberries, pineapple chunks, mandarin oranges, kiwi, and grapes. Gently toss to mix and set aside.
  2. In a separate bowl, use an electric mixer to beat the cream cheese until smooth.
  3. Add the cheesecake pudding mix, Greek yogurt, vanilla extract, coconut milk, and honey. Beat until the mixture is smooth and creamy.
  4. Pour the cheesecake mixture over the fruit and gently fold together until all the fruit is coated.
  5. Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
  6. Before serving, garnish with toasted coconut flakes and additional fresh fruit if desired.

Notes

This salad is perfect for summer gatherings or as a light dessert. Feel free to adjust the sweetness by adding more or less honey based on your taste.
