Ingredients
  

  • 450 g large shrimp
  • 2 ripe avocados
  • 225 g corn fresh, frozen, or canned
  • 30 ml olive oil
  • 1 juice lime
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp chili powder
  • 0.25 tsp garlic powder
  • to taste salt
  • to taste pepper
  • 30 g diced red bell pepper
  • 30 g chopped green onions
  • 30 g chopped cilantro
  • 15 ml lime juice for corn salsa
  • 0.5 juice lime for avocado mash
  • 120 g mayo or Greek yogurt
  • 15 ml lime juice for creamy sauce
  • 1 tsp hot sauce optional
  • 0.5 tsp garlic powder for creamy sauce
  • 0.5 tsp smoked paprika for creamy sauce
  • 15 g chopped cilantro for creamy sauce
  • to serve Cooked rice, quinoa, or cauliflower rice

Method
 

  1. Marinate shrimp in olive oil, spices, lime juice, salt, and pepper for 15–20 minutes.
  2. Mix corn salsa ingredients in a bowl and chill.
  3. Mash avocados with lime juice, salt, and pepper until creamy.
  4. Whisk together creamy sauce ingredients until smooth.
  5. Grill marinated shrimp for 2–3 minutes per side until pink and charred.
  6. Assemble bowls with rice or quinoa as the base; top with corn salsa, avocado mash, grilled shrimp, and drizzle sauce.

Notes

Serve with extra lime wedges for a zesty kick and feel free to customize the toppings based on what you have.
