Ingredients
  

  • 2 pieces Boneless, Skinless Chicken Breasts
  • 185 g Cooked Brown Rice
  • 15 ml Lime Juice
  • 1 piece Small Avocado sliced
  • 120 g Mixed Greens
  • 90 g Black Beans
  • 120 g Canned corn drained or grilled
  • 50 g Cherry Tomatoes cut into quarters
  • 30 g Greek yogurt
  • 75 g Red onion diced
  • 1 piece Jalapeno Pepper sliced
  • 1 tsp Sea salt to taste
  • 1 tsp Black pepper freshly ground, to taste
  • 10 g Chopped cilantro plus more to garnish
  • 30 ml Olive oil
  • 15 ml Fresh lime juice
  • 2 tsp Paprika
  • 2 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Oregano
  • 1 pinch Salt or to taste
  • 1 pinch Pepper or to taste

Method
 

  1. In a ziploc bag, mix all marinade ingredients until smooth: Olive oil, Fresh lime juice, Paprika, Ground Cumin, Chili Powder, Garlic Powder, Onion Powder, Dried Oregano, and a pinch of salt and pepper.
  2. Add the Boneless, Skinless Chicken Breasts, seal the bag, and shake until the chicken is evenly coated.
  3. Heat a grill pan or an outdoor grill over medium-high heat. Add chicken and cook for about 5-7 minutes on each side, or until cooked through and no longer pink on the inside.
  4. Remove from the grill and let it rest for 5 minutes before slicing.
  5. In a small bowl mix Cooked Brown Rice with Lime Juice, chopped cilantro, Sea salt and freshly ground black pepper.
  6. To assemble the bowls, add Mixed Greens at the bottom of each one, then one sliced chicken breast.
  7. Divide the remaining ingredients among the bowls: Small Avocado, Black Beans, Canned corn, Cherry Tomatoes, Greek yogurt, and Red onion. Garnish with fresh cilantro and Jalapeno Pepper, and enjoy!
