Ingredients
  

  • 2 cup cherry tomatoes halved for easy eating
  • 250 g cucumber large, chopped into bite-sized pieces
  • 75 g red onion medium-sized, thinly sliced for mild flavor
  • 1 cup feta cheese cubed into 1/2-inch pieces
  • 0.25 cup fresh parsley finely chopped for garnish and flavor
  • 2 tbsp extra virgin olive oil for a rich and fruity dressing
  • 1 tbsp red wine vinegar or lemon juice use either for a tangy dressing, depending on preference
  • 0.5 tsp dried oregano adds classic Greek flavor to the dressing
  • 0.5 tsp Salt adjust to your preference for seasoning
  • 0.25 tsp Black pepper freshly ground for best flavor, adjust to taste
  • 1 pinch red pepper flakes for a touch of heat, adjust or omit as desired

Method
 

  1. Wash and dry the cherry tomatoes, cucumber, and parsley thoroughly.
  2. Slice cherry tomatoes in halves, chop the cucumber into bite-sized chunks, and thinly slice the red onion.
  3. Place all prepared vegetables into a large mixing bowl.
  4. Cut the block of feta cheese into 1/2-inch cubes and add to the bowl with the vegetables.
  5. In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar or lemon juice, dried oregano, red pepper flakes, salt, and pepper until well combined.
  6. Pour the prepared dressing evenly over the salad ingredients in the large bowl.
  7. Toss gently with a spoon or tongs to combine all ingredients without crumbling the feta cheese too much.
  8. Let the salad rest for 10 minutes before serving, if time allows, to allow the flavors to meld together beautifully.

Notes

This salad is best served fresh. For an added layer of texture, consider adding some toasted pita bread or croutons just before serving. It also pairs wonderfully with grilled chicken, fish, or as part of a larger Mediterranean spread.
