Ingredients
  

  • 210 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 200 g sugar
  • 120 ml oil
  • 2 eggs
  • 240 ml drained crushed pineapple
  • 120 g sour cream
  • 60 ml reserved pineapple juice
  • 2 tsp vanilla extract
  • 180 g powdered sugar
  • 45 ml reserved pineapple juice
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit. Grease an 8 x 4.5 or 9 x 5-inch loaf pan and set aside.
  2. In a medium bowl, add the flour, baking powder, and salt. Whisk to combine.
  3. In a large bowl, add the sugar, oil, eggs, drained crushed pineapple, sour cream, reserved pineapple juice, and vanilla extract. Whisk to combine.
  4. Add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour the batter into the pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  6. Once baked, let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to finish cooling.
  7. Whisk the powdered sugar, reserved pineapple juice, and vanilla extract together until smooth.
  8. Pour the glaze evenly over the loaf. Let the glaze set before cutting into slices.

This bread is perfect for breakfast or as an afternoon snack. For added flavor, consider adding chopped nuts or coconut.
