  • 0.5 cup powdered sugar Ensures a smooth, sweet consistency.
  • 1 tub whipped topping Thawed, provides a light and airy texture.
  • 1 can crushed pineapple Thoroughly drained to prevent excess moisture.
  • 1 can mandarin oranges Gently drained to keep segments intact.
  • 0.5 cup maraschino cherries Halved for even distribution and a pop of color.
  • 0.5 cup chopped walnuts or pecans Optional, adds a pleasant crunch and nutty flavor.
  • 1 cup mini marshmallows Contributes to the soft texture and sweetness.
  • 0.5 cup shredded coconut Optional, enhances tropical flavor.
  • 1 banana sliced bananas Optional, add just before freezing to avoid browning.

Equipment

  • Large Bowl
  • Spatula
  • Loaf pan or 8x8 dish
  • Plastic wrap or foil

Method

  1. In a large bowl, beat the softened cream cheese with powdered sugar until smooth and fluffy. Add sour cream and mix until fully combined. Gently fold in the thawed whipped topping until no streaks remain.
  2. Fold in the drained pineapple, mandarin oranges, cherries, chopped nuts, and mini marshmallows. Add shredded coconut or sliced bananas if using. Stir gently to avoid breaking up the fruit.
  3. Spoon the mixture into a loaf pan, mold, or 8×8 dish. Smooth the top with a spatula. Cover tightly with plastic wrap or foil.
  4. Freeze for at least 4 hours, or until completely firm. Overnight is best if you want clean slices.
  5. To serve, let sit at room temperature for 5–10 minutes to soften slightly. Slice with a warm knife or scoop into bowls. Garnish with extra cherries or a sprig of mint for a fresh finish.

Notes

This versatile recipe allows for many variations. Feel free to experiment with different canned or fresh fruits. For best results, ensure all canned fruits are thoroughly drained to prevent an icy texture. A warm knife makes slicing easier.
