Ingredients
  

  • 12 large eggs
  • 120 ml mayonnaise
  • 2 tsp Dijon mustard
  • 5 ml white vinegar
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika
  • 60 g all-purpose flour
  • 2 large eggs (for dredging)
  • 100 g panko breadcrumbs
  • 500 ml vegetable oil for frying
  • 30 g chopped chives for garnish (optional)

Method
 

  1. Boil eggs, cool, peel, and halve. Remove yolks and mix with mayo, mustard, vinegar, salt, pepper, and paprika.
  2. Set up three bowls with flour, eggs, and breadcrumbs. Coat egg whites, fry until golden and crispy.
  3. Pipe yolk mixture into fried whites, garnish, and serve warm or at room temperature.

Notes

These eggs can be served warm or at room temperature. Feel free to experiment with spices in the yolk mixture for added flavor.
